Edible Coloured Printing Paste for Food Packaging Materials Using Carboxymethyl Cellulose/Chitosan nanoparticles Composite as Thickeners

Abstract

Chitosan is a biopolymer that has the potential to produce food packaging film which possess antibacterial properties. Chitosan film often has greater water solubility and fewer mechanical and antibacterial characteristics. In this work, textile printing paste was developed using carboxymethyl cellulose (CMC) and chitosan nanoparticles (ChNP) blend as thickeners, chitosan composite films were prepared by adding different percent of chitosan nanoparticles (0.5, 1.00 %), with (1.5%, 2.0%) carboxymethyl cellulose (CMC). The elucidation of the film was established using., Fourier-transform infrared spectroscopy and TGA. the composites are used as an edible thickener for printing paper and jute materials that are used for food packaging. The prints exhibit superior antibacterial activity than that printed using (CMC) thickener only when tested against Escherichia coli and Staphylococcus aureus. The film with the best inhibition rate more than 96% reduction with sample contain (2.0% CMC + 1.0% ChNP) for Gr+ and Gr- and 96% for antifungal. The rheological properties and color assessment are also measured. The blends thickeners exhibit non-Newtonian pseudoplastic behavior.
